Spinach Salad with Creamy Yogurt Dressing
Ingredients
- 10 cups fresh spinach
- 1 1/2 cups fresh mushrooms, sliced
- 1/4 cup alfalfa sprouts
- 4 tablespoons feta or blue cheese, crumbled
- 1/2 cup plain yogurt
- 1/4 cup fresh parsley, chopped
- 2 tablespoons mayonnaise
- 1 large clove garlic, minced
- salt & pepper to your taste
Method
Step 1
Tear the spinach into bite-size pieces. In a large salad bowl, combine the spinach, mushrooms, alfalfa sprouts and cheese.
Step 2
For the yogurt salad dressing: Combine the yogurt, parsley, mayonnaise, garlic, salt and pepper. Pour the dressing over the vegetables and toss until everything is well coated. Serve immediately.
Tips and Variations:
- Baby spinach is ideal for this salad recipe, but use regular spinach and just tear it into fork size pieces if that is what you have.
- Really amp up the nutritional value even more by replacing the spinach with baby kale or a spinach and kale mix.
- Make it into a meal by adding strips of grilled steak or chicken as in the image above.
- For a vegetarian protein add pieces of chopped fried tofu.
- Add variety by changing the cheese you use. You can also use 2 tablespoons of Parmesan cheese or a grated extra old cheddar in this spinach salad.
